Almost Raw Strawberry Rhubarb Pie

4 Layered Strawberry Rhubarb Pie

The Crust
ground macadamias and pecans

The 1st layer
1/2 cup cashews
1/4 cup almond milk
1 cup coconut flakes
cinnamon
1 can coconut milk
6-8 large dates

blend it all up in the cuisinart and spread over the bottom layer of crust

The 2nd layer is
Strawberries drizzled with agave

The 3rd Layer is
4 stalks Rhubarb boiled in a pot with agave and water until soft
6 tblsp coconut butter

blend up in cuisinart and chill . once cold put on top of the berry layer, stick in freezer for 15 min. sprinkle with coconut flakes.

Holy Moly! That is soooo good. A perfect springtime dessert. Enjoy!
